Cream Marinated Grilled Chicken
Don’t you love when you do something on accident in the kitchen and it turns out to be one of the best things you’ve ever done?? That’s what happened with this chicken. I had a pack of chicken thawed for dinner and was desperate for something different to do with it. I stood in front of the fridge for a while, then moved on to standing in front of the pantry and then it came to me – chicken tenders marinated in cream! Yeah, it sounded weird to me too but I decided to go for it and see what happened. It was a delicious miracle! The chicken turned out so tender and juicy and the flavor was a-MAH-zing! Hubby now requests this chicken at least twice a week…every week! Creamy Marinated Grilled Chicken Ingredients: 1...
Lemon Butter Broccoli
Hopefully my sister-in-law won’t mind me spilling her secret – this post is for her! I was visiting her this past January and she mentioned that she wanted me and my mom to cook broccoli for her because she wanted to see if she liked it…she hadn’t really eaten it in the past and had no idea how to best prepare it. I will admit that I thought it was kinda funny that she didn’t know how to cook broccoli, it seems so easy and straightforward. But then I realized there are probably a lot of people who don’t know what to do with this veggie…we aren’t born with an innate ability to cook vegetables! So I was happy to show her the best way to cook the broccoli and personally the below is my favorite...

Creamy Beef & Rice
Tonight was a night where I had ground beef thawed for dinner and not a clue what to make! So I looked through the pantry and the refrigerator and after about 30 minutes this is what made it onto the table. The most amazing part? Hubby loved it and asked for seconds! I just love it when improvisation turns out to be a success… Creamy Beef and Rice Ingredients: 1.75 cups of water 1 cup basmati rice 1 lb ground beef 1 tbsp olive oil Celtic sea salt & black pepper 1 tbsp dried basil 1 tbsp dried cumin 1/2 tbsp garlic salt 1.5 tbsp salted butter 1/3 cup shredded cheese (I used a Mexican mix) 1/2 cup chicken broth 3 tbsp whipping cream 1/8 tsp ground mustard 1/2 cup green onions, chopped 3 garlic cloves, minced Directions: In a pot, boil 1.75 cups...
Maple Cheesecake Pie
Is your mouth already watering from the title?? It should be…I made this delicious dessert the other night and hubby and I both loved it! When we were in Vermont a couple of weeks ago I picked up a pack of Maple Cheesecake Mix, made by Halladay’s Harvest Barn. That’s what I used to make the pie. I was a little wary at first, because I prefer not to use prepared mixes, but this was a local company and it was gluten free! So we decided to experiment and I am happy to say it turned out yummy. I did make an almond flour crust for the pie, but it turned out horribly so I will have to keep playing with it until it’s good enough for posting. So I would recommend either making your own favorite pie crust or just simply buying a graham...

I know a lot of people read just the title of this post and thought “ew gross, moving on”. But please trust me…brussels sprouts are not only good for you but there are ways to make them delicious. Stop rolling your eyes, I’m serious! When I married my husband he wouldn’t touch a vegetable; he was convinced they were all gross and he had no desire to try them. Fast forward to this past week when he came home from work and said this to me “A lady at work asked for your blog address today because I told her how delicious your brussels sprouts are”. Literally, he said that! So…read one and don’t be a weenie – just try them my way and you’ll be amazed! Brussels Sprouts First of...
