Maple Cheesecake Pie
Is your mouth already watering from the title?? It should be…I made this delicious dessert the other night and hubby and I both loved it! When we were in Vermont a couple of weeks ago I picked up a pack of Maple Cheesecake Mix, made by Halladay’s Harvest Barn. That’s what I used to make the pie. I was a little wary at first, because I prefer not to use prepared mixes, but this was a local company and it was gluten free! So we decided to experiment and I am happy to say it turned out yummy. I did make an almond flour crust for the pie, but it turned out horribly so I will have to keep playing with it until it’s good enough for posting. Yum, yum!! I experimented until I got this cake good enough for hubby to compliment. Then I made it for the family on Easter weekend and it was a hit! SOOO good!! I was really craving a sweet so I decided to create a cookie using almond flour. They turned out so delicious that the hubby is doing whatever I ask of him tonight just to get seconds, hah! These aren’t quite as crumbly as typical shortbread cookies – they are a little softer and more moist.
