Cream Marinated Grilled Chicken

Cream Marinated Grilled Chicken

Don’t you love when you do something on accident in the kitchen and it turns out to be one of the best things you’ve ever done??  That’s what happened with this chicken.  I had a pack of chicken thawed for dinner and was desperate for something different to do with it.  I stood in front of the fridge for a while, then moved on to standing in front of the pantry and then it came to me – chicken tenders marinated in cream! Yeah, it sounded weird to me too but I decided to go for it and see what happened.  It was a delicious miracle!  The chicken turned out so tender and juicy and the flavor was a-MAH-zing!  Hubby now requests this chicken at least twice a week…every week!   Creamy Marinated Grilled Chicken Ingredients: 1...

Lemon Butter Broccoli

Lemon Butter Broccoli

Hopefully my sister-in-law won’t mind me spilling her secret – this post is for her!  I was visiting her this past January and she mentioned that she wanted me and my mom to cook broccoli for her because she wanted to see if she liked it…she hadn’t really eaten it in the past and had no idea how to best prepare it.  I will admit that I thought it was kinda funny that she didn’t know how to cook broccoli, it seems so easy and straightforward.  But then I realized there are probably a lot of people who don’t know what to do with this veggie…we aren’t born with an innate ability to cook vegetables! So I was happy to show her the best way to cook the broccoli and personally the below is my favorite...

GF Rosemary Pepper Crackers

Hubby looked at me the other day and said “I need something crunchy!”…eating gluten free means you don’t usually have crackers or chips in the house.  All of the gluten free crackers that I’ve tried from the store have been YUCK so I gave up trying to buy any.  So when he told me that the other night it just hit me…I need to make crackers!  After experimenting I think I finally came up with the yummiest cracker.  It has crunch, flavor and is the perfect compliment to any dip or even soup!   GF Rosemary Crackers Ingredients: 1.5 cups almond flour 1.4 cup coconut flour 2 tbsp dried rosemary 1/4 tsp Celtic Sea Salt 1 tsp black pepper (fresh ground is the best) 1.5 tbsp olive oil 1 egg Directions: In a larger bowl mix...
